Apple and Blueberry Muffins

  I woke up this morning knowing I had to make some delicious blueberry muffins with the fresh blueberries we bought when shopping yesterday. Adding some apple too made the perfect combination and a yummy morning tea on a beautiful morning.

Here's a tutorial for you:

Apple and Blueberry Muffins

Makes: 18 muffins
Preparation time: 30 mins (more if you want to take photos, like I did)
Cooking time: 20 mins

Step 1. Gather the ingredients and pre-heat the oven to 180 degrees Celsius (or 356 degrees Fahrenheit).
You will need - 175g melted butter, 2 1/2 cups self raising flour, 3/4 of a cup of brown sugar, 2 green apples, a teaspoon of vanilla essence, 125g blueberries, 4 eggs and 1 1/4 cups of milk.


Step 2. Core, peel and chop the apples.


Step 3. Mix together in a bowl with electric beaters the flour, butter, sugar, vanilla, milk and eggs.


Step 4. Add the blueberries and chopped apple and stir in using a mixing spoon.


Step 5. Scoop the mixture into individual muffin cases.


Step 6. Put them in the oven and sit back and wait for 20 minutes! Or you can do the washing up like I did...


Step 7. After 20 minutes in the oven, the muffins should be ready to enjoy. Leave them to cool for a few minutes though...

  5. Thanks Amy and Tamsyn :) Ooh, I forgot to mention, I did use fresh blueberries! Frozen would work too though...
